Moroccan Red Lentil Soup

Are you wondering what to cook for dinner? Well may I suggest one of my very favourite new recipes, 'Morocaan Red Lentil Soup'. This recipe is very hard to beat, and a MUST try because it is so easy to do. Honestly, it will put hairs on your chest, keep the vampires at bay and make you feel all warm and fuzzy all at once.

MOROCCAN RED LENTIL SOUP

2 tbspn extra virgin olive oil
2 large onions
2 cloves garlic
2 tspn ground coriander
1 tspn ground cumin
1 tspn ground turmeric
1/2 tspn paprika
1/4 tspn cinnamon
1.5 tspn salt
1/2 tspn ground black pepper
7 cups vegetable broth
1 can crushed tomatoes
2 cups dried red lentils
1 lemon juiced
3 tbspn fresh parsley
1 tbspn fresh cilantro

Heat olive oil, add onions & cook until tender. Add garlic, coriander, cumin, tumeric, paprika, cinnamon, salt and pepper and cook for another minute. Add the broth and tomatoes and heat to boiling. Pour into a slow cooker. Stir in the lentils, cover the cooker and cook for 8 hours on low. (4-5 hours on high), until lentils are tender. Stir in lemon juice, parsley and cilantro to serve. Serve with fresh crusty bread.

Everyone has a slow cooker don't they? If you don't you are seriously missing out! Do yourself a favour....
