I got this recipe from Mum who made it for dessert a few weeks ago and it was absolutely stunning. When she said it was easy too, she had me. Today I whipped up one of my own just to make sure it was easy as well as good....
I'm pleased to be able to tell you it still tastes great, and yep, it's dead easy. While I love a good rich dessert, this is nice because it isn't too sweet or sickly, just a lovely balance of flavours. I had mine at room temperature with a dollop of cream. Yeah okay, maybe 2 dollops.

Apple & Sour Cream Slice
Base
1 Green's Vanilla Cake Mix
1/2 cup coconut
125g butter
1 egg
Mix together and press into a lamington tin. Cook for 10 mins @ 180degrees.
Pour 450g of stewed apples over hot base.
Topping
200g sour cream
1 egg
1 tspn vanilla essence
Mix well and pour over apple. Sprinkle with castor sugar and cinnamon. Cook for 20 mins.
